Vanilla Pomegranate Elixir

As the weather turns colder and we start thinking about holiday preparations, this Vanilla Pomegranate Elixir is just the cocktail to bridge the gap and take us from fall into winter.

Traditionally, when the thermometer dips, the cocktails we serve tend to take on warm notes (think ginger, cinnamon, nutty, caramel flavours). This one is just the opposite but seems right to serve this time of year.

Perhaps it’s the combination of pomegranate tartness with the sweet and floral notes of vanilla and lavender. Or maybe it’s just the colour, but whatever it is – this cocktail is festive and fruity…and dangerous.

It looks beautiful in individual glasses, but would also be stunning prepared in a big batch and set it up on your bar in a clear pitcher.

Ingredients

  • 1/2 cup Pomegranate Juice
  • 1.5 oz Vanilla Vodka
  • 1.5 tsp Lavender Syrup (I used Steed & Company Lavender syrup)
  • Ice
  • Sparkling Water
  • Pomegranate Arils (for garnish)

Directions

  1. Fill shaker with ice and add juice, vodka and syrup. Shake well.
  2. Pour into glass and top with sparkling water.
  3. Sprinkle a few pomegranate arils for garnish

Joyful Hostess Tip: As an alternate – substitute (sweeter) champagne for sparkling water. You can also make mocktail version by omitting the vanilla vodka and adding flavoured sparkling water (like lemon or orange – cherry would be good too!).
