Hint O’ Mint Martini

This mint martini is will have you feeling festive in no time! And I don’t just mean the because of the alcohol.

This drink all started on a recent trip to Stratford, Ontario. Everyone knows that a trip to this pretty little town isn’t complete without a visit to Rheo Thompson Candies for their world famous “Mint Smoothie” chocolates.

What makes these chocolates so special? They have this “smoothie” centre that melts in your mouth. The texture of which is perfect – not overly gooey or too hard. And the mint flavour is the soft taste of  real mint, not the overpowering fake taste of lesser quality mint extracts. Needless to say we bought a few boxes of these sweet bites.

Next we stopped at Junction 56 Distillery where we enjoyed a guided tasting of many of their exceptional spirits – one of which is the “Junction 56 Mint Smoothie Liqueur.” My mind was blown. It tasted exactly like those delicious chocolates! Aaaannd we took a few bottles home with us.

While this liqueur is delicious on its own – I wanted to make something that had a bit more flair without being overly complicated.

Ingredients

Directions

  1. Grate mint smoothie chocolate to create chocolate shavings.
  2. Using pastry brush, paint rim of martini glass with corn syrup.
  3. Dip glass rim in chocolate shavings and set aside.
  4. Fill shaker with ice and add Mint Smoothie Liqueur, RumChata and drop of food colouring.
  5. Shake thoroughly.
  6. Pour into rimmed martini glass to serve.

Joyful Hostess Tip: Two easy desserts: 1. Pour Mint Smoothie Liqueur over vanilla ice cream – top with shaved chocolate and sprig of mint. 2. Serve the liqueur in small white or dark chocolate cups – top with whipped cream and chocolate shavings .
