Caprese salad skewers are such a delicious and colourful appetizer! I love this recipe because, as the hostess, I’m usually trying to find easy and tasty recipes I can make ahead.
And these Caprese salad skewers are perfect!
It’s a twist on the classic Caprese salad – which is basically a layered salad of sliced tomatoes, mozzarella and basil. And like the salad version, you just need a few ingredients. But this is way easier to eat while standing around during a party – no muss no fuss!
Make and serve during the summer when tomatoes and basil are in season or during the holidays to add some festive red and green to your table. Another tasty recipe when fresh basil is in season is this vegan basil pesto.
But no matter the time of year – these appetizers are always a hit! And if you have little ones, this is something they can have fun and help with too.
Ingredients:
- Bocconcini cheese (in these pics I used the regular size and cut into quarters, but you could also use the smaller pearl size bocconcini)
- grape or cherry tomatoes
- fresh basil leaves
- balsamic vinegar reduction (this is the one I use)
- extra virgin olive oil
- kosher salt
Directions
- Use small bamboo skewers, start by adding tomato, basil leaf, cheese, tomato and basil leaf.
- Cover and refrigerate until ready to serve (you can make this the night before).
- Just before serving, drizzle lightly with balsamic glaze and olive oil.
- Sprinkle with kosher salt.
Joyful Hostess Tip: To keep if from being awkward to eat, be sure you don’t make the skewers too long. You want guests to be able to enjoy the flavours together without having to take a huge bite!
