These decadent cupcakes are the perfect treat!

If you’re my son, you’d argue that since they have peanut butter in them…they’re also breakfast food.

So whether you’re slathering this on your chocolate cupcakes (oooo vanilla would be good too) or spreading it on your morning waffles…this frosting recipe is KILLER! Heck, I think it’d even make the kitchen sponge taste good (ewww, I know…too far) And if you like peanut butter – you’re gonna love these soft & crumbly peanut butter cookies.

Peanut Butter Frosting

  • 1 cup of peanut butter
  • 1/2 cup room temperature butter
  • 2 cups sifted icing sugar
  • 1/4 cup milk
  • 1 tsp. vanilla extract

Directions

  1. In a large mixing bowl – beat peanut butter and butter on low speed until blended (and not lumpy).
  2. Gradually add icing sugar 1/2 cup at a time, alternating with splashes of milk and mix until thoroughly blended. You can add more or less of the 1/4 cup of milk depending on how soft you want the frosting. More milk means softer.
  3. Add extract and beat again until light and creamy (about 1 min.)
  4. Ice your cupcakes and enjoy!

Joyful Hostess Tip: Dress your cupcakes up with shaved chocolate or crushed peanuts, or even caramel drizzle would be pretty. Combine all 3 and you have a super decadent finish!
