This Rhubarb Tom Collins recipe adds a pink twist and a tartness to this already refreshing grown up “lemonade.” It’s tall, cool and crisp. A pretty way to cool down on a hot summer day!
I never really knew what a Tom Collins was until a friend of mine convinced me to try it. Until then, I somehow associated it with stuffy older men in knit sweater vests drinking this cocktail in the golf clubhouse or in country clubs. (??? weird, and I really don’t know why)
I was soooo wrong – this is a classic for a reason and it’s anything but stuffy. It’s the ideal cocktail for spring and summer and with the addition of rhubarb, – perfectly refreshing and perfectly pink! (Oh and if you’re looking for something perfectly refreshing and purple – try this Lemon & Lavender Fizz.)
Ingredients
- 2 oz. Gin
- 2 oz. Rhubarb Simple Syrup
- .5 oz Lemon Juice
- Club Soda
Directions
- In Collins glass add gin and simple syrup and give quick stir.
- Top glass with ice cubes.
- Add lemon juice and stir.
- Top with club soda and sir gently to combine.
- Garnish with lemon and mint
Joyful Hostess Tip: To make an ORIGINAL Tom Collins, swap rhubarb simple syrup for regular simple syrup and add 1 oz. lemon juice. Garnish with lemon and cherry.
