Strawberry mojitos are perfect for summer! What’s not to love?! Lime, mint, berries and a splash of rum combine to make a crisp, light and refreshing cocktail that’s will keep you cool as temperatures start to rise.
This recipe gives the classic mojito is a strawberry twist, but you can substitute any berry you like to create a version that’s all your own. I especially like to change it up as the different berries come into season to create a cocktail with the freshest ingredients. Blueberries, blackberries, and raspberries all make for a delicious substitute. Or if you’re looking to offer a mocktail with berries – try this Raspberry Orange Mocktail.
Ingredients
- 2-3 strawberries
- 1 lime (cut in 6 wedges)
- 9-10 mint leaves
- 2 tbsp. of sugar
- 2 oz of white rum
- Club soda
- Strawberry, lime wedge and sprig of mint for garnish
Directions
- In cocktail shaker add berries, mint leaves, sugar.
- Squeeze 2 wedges of lime into cocktail shaker and add 3rd wedge.
- Muddle until berries are soft and oils from mint leaves are released.
- Add ice and rum to shaker and shake a few times.
- Pour contents (unstrained) into highball glass half full of ice.
- Top with club soda and give quick stir.
- Garnish with lime wedge, strawberry and sprig of mint.
You can make a non-alcoholic version of this by simply omitting the rum and adding a few more berries. It’s just as refreshing and every bit as delicious!
