Making Chocolate Salami

Never did I think the words “chocolate” and “salami” would be a combo I would be eager to try – but here we are….and I’m so glad I did. It’s delicious!

This no-bake treat added a special touch to the chocolate charcuterie board I created for our last house party. It’s simple to make and yet sophisticated enough to add to any dessert platter. You could even make one to bring to bring as a gift for the chocolate lovers in your life.

Ingredients

  • 10 oz. semi- sweet chocolate
  • 4 oz. unsalted butter
  • 1 cup coarsely crushed gingersnap cookies
  • 3/4 cup chopped walnuts
  • 2 tbsp. chopped candied ginger
  • 2 tbsp. brewed coffee ( I used espresso)
  • icing sugar

Directions

  1. In double broiler, melt chocolate with butter until smooth and glossy and remove from heat.
  2. Stir in cookies, walnuts and candied ginger and coffee.
  3. Let sit for approx 15 mins (so the chocolate sets up slightly and starts to thicken)
  4. Tear approx. 12 inch piece of plastic wrap and place on counter with long edge closest to you. Drop the chocolate in a log shape on the plastic wrap (following the long edge).
  5. Liift the long edge of the plastic wrap over the log and wrap tightly. Twist ends tight to remove any air.
  6. Chill log in fridge for approx 15 mins to harden.
  7. Take out of fridge and (keeping it in the plastic) roll along the counter under your palms a few times to mold to round log shape). This step simply helps to give a more realistic round shape to your chocolate salami. Repeat 2-3 more times (at 15 min. intervals) as needed and until you’re happy with the shape.
  8. Chill overnight (or at least 4 hours).
  9. Remove from fridge for approx 15 mins to warm up and roll in icing sugar. (you want the chocolate warm enough that the icing sugar will stick to the outside)
  10. Re-wrap in plastic and store until ready to use.
  11. When ready to serve, remove from fridge for 30 mins and with a sharp knife, slice into thin round slices. (If chocolate is too cold or if knife is too dull, your salami will crumble and you won’t get nice slices.)

Joyful Hostess Hack: For variation try using shortbread cookies and candied oranges, or mint cookies and pecans. You could even try using white chocolate for an interesting twist.
