Simple Egg and Bacon Muffins you can make ahead

Everything you need to know to make this simple and delicious brunch recipe: egg and bacon muffins. And the best part is they can be made ahead!

Want to host a stellar brunch with little effort? Or maybe you need a recipe for those rushed mornings or a quick protein packed lunch? These muffins can save the day! I usually make 2 dozen at a time because they freeze beautifully and that way they’re handy for when I need them.

Plus this recipe below is dairy free too! I made it for a brunch where one of my guests was dairy free and they came out beautifully fluffy without adding milk or cheese.

And as far as flavours go, you can create any flavour combo you like. In this recipe there’s spinach and onion but you could totally do a Tex-Mex version. All you need is to swap the spinach and onion for red pepper, corn and some taco seasoning. Or how about making it a western? Just add green pepper, swap the bacon for ham add a bit of cheddar cheese and there you go! The possibilities are endless, it’s like a choose your own egg muffin adventure!

This recipe makes enough for a dozen egg and bacon muffins.

Ingredients

  • 7 eggs
  • 5-6 slices of bacon (chopped)
  • 1/4 onion
  • 1/2- 3/4 cup frozen spinach (thawed and drained)
  • 3 tbsp of water
  • salt & pepper to taste

Directions

  1. Spray 12 cup muffin tin with non stick cooking spray (make sure it’s really well sprayed!)
  2. Preheat over to 350 degrees
  3. In a non stick skillet add the chopped bacon and onion and sauté until bacon is fully cooked.
  4. Add spinach and sauté for additional minute to incorporate into bacon onion mixture.
  5. Set aside to cool.
  6. In separate bowl, beat eggs, water and salt & pepper with whisk.
  7. Add bacon mixture to eggs and whisk.
  8. Pour into muffin cups approx. 2/3 full and cook approx. 20 – 25 mins until eggs are cooked and set.
  9. Once cool, remove from muffin tins.
